Back when I was a kid, St. Patrick’s Day was pretty much unheard of. I think maybe we were told to wear green to school if St. Patrick’s Day happened to fall on a school day, but that was basically the extent of it. Once my own kids were school aged, I found out real quick that St. Patrick’s Day is apparently a much bigger deal now. All the classroom make leprechaun traps, tons of crafts and many teachers make sure that the leprechauns leave a little treat for the kids on St. Patrick’s Day morning when the kids arrive at school. Of course, the leprechauns cause a little mischief in the classroom, too.
All that hoopla in school left my kids asking why the leprechaun didn’t do anything at our house. I could have (and should have) taken the easy way out and told them that the leprechauns only went to the schools to cause shenanigans and leave treats, but for some reason I decided to play along and now there is no going back I suppose.
But since we don’t celebrate Valentine’s Day in our house, pretending we’re Irish for a day isn’t so bad. We need something to help beat the cabin fever & what better than this fun St. Patrick’s Day dessert idea! It’s easy to make and trust me, it will be gobbled up in no time flat.

Servings: 8 (4″ across trifle) to 16 (2″ across trifle)
Funfetti Ingredients (as per box):
o 1 Box (15.25oz) Pillsbury Funfetti Cake Mix
o 1 Cup Water
o 1/3 Cup Oil
o 3 Whole Eggs (as per box)
You will also need:
- Home Style Fluffy White Frosting Mix
- 1/2 Cup Boiling Water
- 2 Cups Lucky Charms Limited Edition Green Clovers (hand pick the marshmallows out)
Here’s what you do:
1. Note: Please note that some of the instructions below were taken from the Funfetti Cake Mix and Betty Crocker Fluffy Icing box instructions.
2. Preheat oven to 350 degrees F. Spray large, thin pan with non-stick cooking spray.
3. In a large bowl, blend cake mixture, water, oil and eggs and mix until moistened. Beat with mixer for 2 minutes on medium speed.
4. Pour a thin layer (about 1 inch) of cake mix into a large, thin pan (you may need 2 pans for all of the mixture). Bake at 350 degrees for approximately 10-12 minutes or until you can insert a toothpick in the center and it comes out clean.
5. Set aside and let cool for 10-15 minutes.
6. Boil 1/2 cup water. Beat frosting mixture in a small bowl (metal or glass) and slowly add water while mixing on low speed for 30 seconds. Beat on high speed for 5 to 7 minutes.
7. Take any size circular glass trifle dish (I recommend anywhere from 2″ across to 4″ across) and place upside down onto cake pan. Press down firmly and twist – cutting out a perfect size circle for your dish. Do this 2 to 3 times, depending on the height of your dish and your preference. Once you have your desired cake layers, start building!
8. First, spread fluffy frosting in the base of the dish. Next, add a cake layer. Repeat this process until you have reached your desired height. Top your dessert with a final layer of fluffy frosting, twisting your spatula in the center to create a swirl. Add green lucky charm clovers for the perfect St. Patrick’s Day celebration!
